Description

Small Batch Almond Joy Cookies are soft, chewy cookies packed with chocolate chips, shredded coconut, and almonds, inspired by the classic candy bar.


Ingredients

  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 1 large egg yolk
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup shredded sweetened coconut
  • 1/4 cup semi-sweet chocolate chips
  • 2 tbsp chopped almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the vanilla extract and egg yolk until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the coconut, chocolate chips, and chopped almonds.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 9-11 minutes or until the edges are golden and the centers are set.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can toast the almonds beforehand for extra flavor.
  • These cookies are best enjoyed within 2-3 days of baking.
  • Store in an airtight container at room temperature.
