Description

This Slow Cooker Peanut Butter Oatmeal is a creamy, comforting breakfast made with rolled oats, peanut butter, and a touch of maple syrup. Perfect for busy mornings, it can be prepared in advance and slow-cooked overnight or throughout the day for a warm, hearty meal. Topped with sliced bananas, chopped peanuts, or chocolate chips, it’s a delicious and nutritious way to start your day.

Ingredients

Scale

Main Ingredients

  • 2 cups old-fashioned rolled oats
  • 4 cups milk (dairy or non-dairy)
  • ½ cup creamy peanut butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Toppings (optional)

  • Sliced bananas
  • Chopped peanuts
  • Chocolate chips
  • Drizzle of honey or maple syrup

Instructions

  1. Prepare the slow cooker: Lightly grease the inside of your slow cooker with cooking spray or butter to prevent the oats from sticking during cooking.
  2. Combine ingredients: Add the rolled oats, milk, creamy peanut butter, maple syrup or honey, vanilla extract, cinnamon, and salt into the slow cooker. Stir thoroughly to combine all ingredients evenly.
  3. Cook the oatmeal: Cover the slow cooker and set it to cook on LOW for 6 to 7 hours or on HIGH for 2½ to 3 hours. If possible, stir once or twice during cooking to help with even consistency.
  4. Finish and serve: Once the oats have cooked into a creamy texture, stir again to smooth out the peanut butter. Serve the oatmeal warm, topped with your choice of sliced bananas, chopped peanuts, chocolate chips, or an additional drizzle of honey or maple syrup if desired.

Notes

  • For a chewier texture, use steel-cut oats instead of rolled oats. Increase the milk to 5 cups and cook for a longer time.
  • This oatmeal recipe is excellent for meal prep and reheats well throughout the week, making mornings easier and faster.
  • You can customize toppings to your taste and dietary preferences, adding fruits or nuts as desired.
