- 4 boneless, skinless chicken breasts
- 1 cup orange juice
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup rice vinegar
- 1/4 cup cornstarch
- 1/4 cup water
- 1 tablespoon sesame oil
- Sesame seeds (optional, for garnish)
- Green onions (optional, for garnish)
Instructions
- Place the chicken breasts into the slow cooker.
- In a bowl, whisk together the orange juice, soy sauce, honey, garlic, ginger, and rice vinegar.
- Pour the sauce mixture over the chicken breasts in the slow cooker.
- Cover and cook on low for 4-6 hours, or until the chicken is fully cooked and tender.
- Remove the chicken from the slow cooker and shred it with two forks.
- In a small bowl, mix cornstarch with water to create a slurry.
- Pour the slurry into the slow cooker with the sauce and stir well. Cook on high for 10-15 minutes to thicken the sauce.
- Return the shredded chicken to the slow cooker and toss it in the sauce.
- Serve the chicken over rice and garnish with sesame seeds and green onions if desired.
Notes
- For a thicker sauce, you can add more cornstarch slurry as needed.
