Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 8 oz egg noodles or spaghetti
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a medium bowl, whisk together honey, soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour over the chicken.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  4. Remove the chicken from the slow cooker and shred with two forks.
  5. In a small bowl, mix cornstarch and water to create a slurry. Stir into the sauce in the slow cooker and cook on high for 10-15 minutes until thickened.
  6. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
  7. Meanwhile, cook the noodles according to package instructions, then drain.
  8. Serve the honey garlic chicken over the noodles and garnish with green onions and sesame seeds.

Notes

  • You can substitute chicken breasts for thighs if preferred.
  • Add steamed vegetables like broccoli or bell peppers for a complete meal.
  • Adjust the amount of red pepper flakes to control spice level.
