- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup honey
- 1/2 cup low-sodium soy sauce
- 1/4 cup hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons water
- 8 oz egg noodles or spaghetti
- 2 green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- Place the chicken thighs in the slow cooker.
- In a medium bowl, whisk together honey, soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour over the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Remove the chicken from the slow cooker and shred with two forks.
- In a small bowl, mix cornstarch and water to create a slurry. Stir into the sauce in the slow cooker and cook on high for 10-15 minutes until thickened.
- Return the shredded chicken to the slow cooker and stir to coat with the sauce.
- Meanwhile, cook the noodles according to package instructions, then drain.
- Serve the honey garlic chicken over the noodles and garnish with green onions and sesame seeds.
Notes
- You can substitute chicken breasts for thighs if preferred.
- Add steamed vegetables like broccoli or bell peppers for a complete meal.
- Adjust the amount of red pepper flakes to control spice level.
