Ingredients
Scale
Meat
- 3-4 lb chuck roast
Seasonings & Sauces
- 1 tablespoon olive oil
- 1 packet (1 oz) dry onion soup mix
- 2 cups beef broth
- 1 cup French onion soup (canned or homemade)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
Vegetables
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
Finishing & Thickening
- 3 tablespoons unsalted butter
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (if using cornstarch)
- Fresh parsley, for garnish (optional)
Instructions
- Sear the Roast: Heat the olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 3-4 minutes per side, which helps to lock in flavor and create a delicious crust.
- Transfer to Slow Cooker: Move the seared roast to the slow cooker, ensuring it sits in the center for even cooking.
- Prepare the Sauce: Sprinkle the dry onion soup mix evenly over the roast. In a separate bowl, whisk together the beef broth, French onion soup, Worcestershire sauce, dried thyme, and black pepper until well combined.
- Add Aromatics: Pour the prepared liquid mixture over the roast. Arrange the thinly sliced onions and minced garlic around and on top of the roast to impart their deep flavors during cooking.
- Slow Cook: Cover the slow cooker and cook on LOW for 8-10 hours or on HIGH for 4-5 hours, until the meat becomes fork-tender and easily pulls apart.
- Enhance the Flavor: Once cooked, stir in the unsalted butter to add richness and a silky texture to the sauce.
- Thicken the Sauce (Optional): For a thicker gravy, mix the cornstarch and water in a small bowl to create a slurry. Stir this mixture into the slow cooker and cook on HIGH for an additional 10-15 minutes until the sauce thickens to your desired consistency.
- Serve & Garnish: Serve the pot roast hot with its rich onion sauce over mashed potatoes, rice, or crusty bread. Garnish with fresh parsley if desired for a burst of color and freshness.
Notes
- You can prepare the French onion soup from scratch for a more authentic flavor or use canned soup for convenience.
- Searing the meat is crucial for flavor but can be skipped if short on time; however, it may slightly affect the depth of flavor.
- Adjust the thickness of the gravy by adding more or less cornstarch slurry according to your preference.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
- Serve with your favorite side dishes such as roasted vegetables, steamed green beans, or a fresh salad for a complete meal.
