Instructions

  1. Prepare the Slow Cooker: Spray a 4 to 6-quart slow cooker with nonstick cooking spray to prevent sticking. Add the brown gravy mix, au jus mix, and water to the slow cooker and whisk thoroughly to combine the ingredients.
  2. Add the Beef: Place the beef stew meat into the slow cooker and stir gently to coat all pieces evenly with the gravy mixture. Ensure as much meat as possible is covered by the liquid for even cooking. Cover the slow cooker with its lid.
  3. Cook the Beef: Set the slow cooker to low and cook for 6 to 8 hours or, alternatively, cook on high for about 5 hours. The beef should be tender and fully cooked by the end of this time.
  4. Prepare Sour Cream Mixture: Approximately 30 minutes before serving, take about 1/2 cup of the gravy from the slow cooker and transfer it to a small bowl. Stir in the sour cream until smooth, then add this mixture back into the slow cooker and stir well to combine.
  5. Finish Cooking: Cover the slow cooker again and cook on high for about 20 minutes. This allows the sour cream to heat through and blend into the sauce without curdling.
  6. Cook Noodles: While the stroganoff finishes, cook the egg noodles according to the package instructions until al dente. Drain and set aside.
