Description

Shrimp Scampi is a quick and delicious seafood dish made with shrimp sautéed in a garlic butter and white wine sauce, served over pasta or with crusty bread.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 tbsp lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • 8 oz linguine or spaghetti (optional, if serving with pasta)

Instructions

  1. Cook pasta according to package directions if using. Drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  3. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
  4. Add shrimp in a single layer and cook for 1-2 minutes on each side until pink and opaque.
  5. Remove shrimp from skillet and set aside.
  6. Pour in white wine (or chicken broth) and lemon juice, scraping up any bits from the pan. Let simmer for 2-3 minutes.
  7. Stir in remaining tablespoon of butter and add shrimp back to the skillet. Toss to coat and heat through.
  8. Remove from heat, sprinkle with fresh parsley, and adjust seasoning with salt and pepper.
  9. Serve immediately over pasta or with crusty bread.

Notes

  • Use fresh or frozen shrimp, but make sure they are properly thawed and patted dry before cooking.
  • For a richer flavor, use all butter instead of a mix of butter and olive oil.
  • Can be served without pasta for a low-carb option.
