Description
Shrimp Scampi is a quick and delicious seafood dish made with shrimp sautéed in a garlic butter and white wine sauce, served over pasta or with crusty bread.

- 1 lb large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 tbsp lemon juice
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- 8 oz linguine or spaghetti (optional, if serving with pasta)
Instructions
- Cook pasta according to package directions if using. Drain and set aside.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
- Add shrimp in a single layer and cook for 1-2 minutes on each side until pink and opaque.
- Remove shrimp from skillet and set aside.
- Pour in white wine (or chicken broth) and lemon juice, scraping up any bits from the pan. Let simmer for 2-3 minutes.
- Stir in remaining tablespoon of butter and add shrimp back to the skillet. Toss to coat and heat through.
- Remove from heat, sprinkle with fresh parsley, and adjust seasoning with salt and pepper.
- Serve immediately over pasta or with crusty bread.
Notes
- Use fresh or frozen shrimp, but make sure they are properly thawed and patted dry before cooking.
- For a richer flavor, use all butter instead of a mix of butter and olive oil.
- Can be served without pasta for a low-carb option.
