For the Shrimp:

  • 1 lb large shrimp, peeled and deveined (tails on or off)
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Additional:

  • 1 cup cooked angel hair pasta or zucchini noodles (optional)
  • heavy-duty aluminum foil

Instructions

  1. Preheat the Grill or Oven: Preheat grill to medium-high or oven to 400°F (200°C).
  2. Prepare Shrimp: In a medium bowl, toss shrimp with melted butter, olive oil, garlic, lemon juice, lemon zest, red pepper flakes, salt, and pepper.
  3. Assemble Packets: Cut four large sheets of foil. Divide shrimp mixture among the foil sheets. Add pasta or zucchini noodles if desired. Seal the edges to form packets.
  4. Cook: Grill or bake for 10–12 minutes until shrimp are cooked through.
  5. Serve: Garnish with parsley and serve hot.

Notes

  • These packets can also be cooked over a campfire.
  • Enhance the flavor with white wine or Parmesan.
  • Serve with crusty bread for soaking up the buttery sauce.
