- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 cucumber, diced
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately or chill for 15–30 minutes before serving.
