Description

Shepherd’s Pie is a classic British comfort food featuring a savory mixture of ground lamb or beef with vegetables, topped with creamy mashed potatoes and baked to golden perfection. This hearty casserole combines tender meat, flavorful vegetables, and a cheesy, crispy potato crust, perfect for a satisfying family dinner.

Ingredients

Scale

Meat Mixture

  • 1 1/2 pounds ground lamb or beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1/2 cup corn (optional)
  • 2 tablespoons tomato paste
  • 1 cup beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping

  • 3 cups mashed potatoes (prepared with butter and milk)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the assembled Shepherd’s Pie.
  2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic and cook for 3 to 4 minutes until softened and fragrant.
  3. Brown Meat: Add ground lamb or beef to the skillet and cook until browned, breaking it up with a spoon to create small crumbles evenly cooked throughout.
  4. Add Vegetables and Seasonings: Stir in diced carrots, tomato paste, beef or vegetable broth, Worcestershire sauce, dried thyme, salt, and black pepper. Let the mixture simmer for 8 to 10 minutes until the vegetables are tender and the sauce thickens slightly.
  5. Incorporate Peas and Corn: Stir in the frozen peas and optional corn, then remove the skillet from heat to prevent overcooking the vegetables.
  6. Assemble the Pie: Spread the meat and vegetable mixture evenly into a 9×13 inch baking dish. Carefully top with the prepared mashed potatoes, spreading them evenly with a spatula to cover the filling completely.
  7. Add Cheese Topping: Sprinkle shredded cheddar cheese on top of the mashed potatoes if using, to add a golden and slightly crispy crust after baking.
  8. Bake: Place the assembled dish in the preheated oven and bake for 20 to 25 minutes until the top is golden brown and the filling is bubbling around the edges.
  9. Rest and Serve: Remove from the oven and let the Shepherd’s Pie rest for 5 minutes before slicing and serving to allow it to set and enhance flavors.

Notes

  • For a richer flavor, use ground lamb and consider adding a splash of red wine to the meat mixture during cooking.
  • Leftover Shepherd’s Pie can be stored in the refrigerator for up to 3 days and reheated in the oven.
  • For a lighter, lower-carb option, substitute mashed cauliflower for the mashed potatoes.
  • Use gluten-free broth to make this recipe suitable for gluten-free diets.
