Ingredients
Scale
Meat Mixture
- 1 1/2 pounds ground lamb or beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup frozen peas
- 1/2 cup corn (optional)
- 2 tablespoons tomato paste
- 1 cup beef or vegetable broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Topping
- 3 cups mashed potatoes (prepared with butter and milk)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the assembled Shepherd’s Pie.
- Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic and cook for 3 to 4 minutes until softened and fragrant.
- Brown Meat: Add ground lamb or beef to the skillet and cook until browned, breaking it up with a spoon to create small crumbles evenly cooked throughout.
- Add Vegetables and Seasonings: Stir in diced carrots, tomato paste, beef or vegetable broth, Worcestershire sauce, dried thyme, salt, and black pepper. Let the mixture simmer for 8 to 10 minutes until the vegetables are tender and the sauce thickens slightly.
- Incorporate Peas and Corn: Stir in the frozen peas and optional corn, then remove the skillet from heat to prevent overcooking the vegetables.
- Assemble the Pie: Spread the meat and vegetable mixture evenly into a 9×13 inch baking dish. Carefully top with the prepared mashed potatoes, spreading them evenly with a spatula to cover the filling completely.
- Add Cheese Topping: Sprinkle shredded cheddar cheese on top of the mashed potatoes if using, to add a golden and slightly crispy crust after baking.
- Bake: Place the assembled dish in the preheated oven and bake for 20 to 25 minutes until the top is golden brown and the filling is bubbling around the edges.
- Rest and Serve: Remove from the oven and let the Shepherd’s Pie rest for 5 minutes before slicing and serving to allow it to set and enhance flavors.
Notes
- For a richer flavor, use ground lamb and consider adding a splash of red wine to the meat mixture during cooking.
- Leftover Shepherd’s Pie can be stored in the refrigerator for up to 3 days and reheated in the oven.
- For a lighter, lower-carb option, substitute mashed cauliflower for the mashed potatoes.
- Use gluten-free broth to make this recipe suitable for gluten-free diets.
