- 1 cup vital wheat gluten
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup vegetable broth
- 1 tbsp soy sauce
- 1 tbsp olive oil (for frying)
- 1/2 cup vegan mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp maple syrup
- 1 tsp lemon juice
Instructions
- In a bowl, mix vital wheat gluten, nutritional yeast, garlic powder, and onion powder.
- Add vegetable broth and soy sauce to the dry ingredients. Stir until a dough forms.
- Knead the dough for 2-3 minutes until elastic, then let it rest for 5 minutes.
- Slice the dough into thin strips.
- Steam the seitan strips for 25 minutes. Let cool slightly.
- Heat olive oil in a pan over medium heat and fry the seitan strips until golden brown on all sides.
- In a small bowl, mix vegan mayonnaise, Dijon mustard, maple syrup, and lemon juice to make the mustard dip.
- Serve the seitan strips warm with the mustard dip on the side.
Notes
- You can bake the seitan strips instead of frying for a lower fat option.
- Adjust the mustard dip sweetness by varying the maple syrup amount.
- Seitan can be made in advance and refrigerated for up to 5 days.
