Instructions

  1. Prepare the Filling: In a large sauté pan over medium heat, cook the ground beef together with tomato sauce and sliced pimento stuffed olives. Stir occasionally and cook until the beef is fully browned and the mixture has thickened, about 10-12 minutes. Remove from heat and set aside.
  2. Make the Masa: Peel and roughly chop the unripe green bananas and yautia root. Using a food processor, blend the peeled and chopped ingredients together until they form a smooth, sticky dough-like consistency, which will serve as the masa for the alcapurrias.
  3. Form the Alcapurrias: Take portions of the masa and flatten them with your hands or a tortilla press to create a thin disc. Place a spoonful of the prepared meat filling in the center of the disc, then fold and seal the edges carefully to encase the filling completely.
