Description

A hearty and comforting Sausage Breakfast Casserole featuring savory browned sausage, crispy hash browns, rich eggs, and melted cheddar cheese baked to golden perfection. Perfect for a weekend brunch or a make-ahead breakfast that serves a crowd.

Ingredients

Scale

Sausage

  • 1 pound breakfast sausage

Base

  • 3 cups frozen shredded hash browns

Egg Mixture

  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cheese

  • 2 cups shredded cheddar cheese

Instructions

  1. Cook sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess fat and set the cooked sausage aside.
  2. Prepare egg mixture: In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until the mixture is smooth and fully combined.
  3. Layer base: Grease a 9×13-inch baking dish thoroughly. Evenly spread the frozen shredded hash browns in the bottom of the dish to form the base layer.
  4. Add sausage and cheese: Spread the cooked sausage evenly over the hash browns, then sprinkle 2 cups of shredded cheddar cheese evenly on top.
  5. Pour egg mixture: Pour the prepared egg mixture evenly over all the ingredients in the baking dish, making sure it is well distributed.
  6. Bake: Place the baking dish in a preheated oven at 350°F (175°C) and bake for 45 to 50 minutes, or until the center is fully set and the top is golden brown.
  7. Rest and serve: Remove the casserole from the oven and let it rest for 10 minutes to set before slicing and serving warm.

Notes

  • Use frozen hash browns directly—no need to thaw.
  • For extra flavor, consider adding diced onions or bell peppers with the sausage.
  • The casserole can be prepared the night before and baked in the morning for convenience.
  • Substitute cheddar with other cheeses like mozzarella or pepper jack for variation.
  • Leftovers keep well refrigerated for up to 3 days and reheat thoroughly before serving.
