Description

This Sausage and Tater Tot Breakfast Quiche is a delicious, hearty morning dish featuring a crispy tater tot crust filled with savory breakfast sausage, fluffy eggs, creamy cottage cheese, and melted mozzarella. Perfect for weekend brunch or a satisfying breakfast, it combines comforting flavors with a fun twist on classic quiche.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish (optional)

  • Freshly chopped parsley

Instructions

  1. Preheat and prepare crust: Preheat your oven to 400°F (204°C). Grease a 9-inch deep-dish pie dish with butter to prevent sticking. Place the frozen tater tots evenly in the pie dish and bake for 15 minutes until they start to crisp.
  2. Mash tater tots: After baking, remove the dish from the oven and use a spoon or spatula to mash the tater tots, pressing them into an even layer to cover the bottom and sides of the pie dish, forming a crust.
  3. Reduce oven temperature: Lower the oven temperature to 350°F (177°C) to prepare for baking the quiche.
  4. Cook sausage: While the oven is cooling, cook the ground breakfast sausage in a skillet over medium to medium-high heat until fully cooked and browned. Crumble the sausage as it cooks. Remove from heat and let it cool slightly.
  5. Mix filling: In a large mixing bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper until well combined. Stir in the grated mozzarella cheese and the cooled cooked sausage, mixing to combine evenly.
  6. Assemble and bake quiche: Pour the egg and sausage mixture evenly over the mashed tater tot crust in the pie dish. Bake at 350°F for 30 minutes, or until the center is set and a knife inserted comes out clean.
  7. Cool and serve: Remove the quiche from the oven and allow it to cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired. Serve warm and enjoy your hearty breakfast quiche!

Notes

  • If desired, substitute the breakfast sausage with a vegetarian sausage alternative for a meatless version.
  • For a richer quiche, you can use full-fat cottage cheese instead of 2% low fat.
  • Make sure to mash the tater tots firmly to create a stable crust that holds the filling.
  • This quiche can be made in advance and refrigerated; simply reheat slices in the oven or microwave before serving.
  • Fresh parsley adds a nice color and fresh herbal note but can be omitted if unavailable.
