Samoa Brownies are a decadent dessert inspired by the famous Girl Scout cookies, featuring layers of rich chocolate brownies, gooey caramel, toasted coconut, and a drizzle of chocolate.

- 1 box brownie mix (plus ingredients listed on box, usually eggs, oil, and water)
- 3 cups sweetened shredded coconut
- 1 (14 oz) bag caramels, unwrapped
- 3 tablespoons heavy cream
- 1/2 cup semi-sweet chocolate chips (for drizzle)
- 1/4 teaspoon salt
Instructions
- Preheat oven and prepare the brownie mix according to package directions. Bake in a greased 9×13-inch pan and allow to cool.
- Spread the shredded coconut evenly on a baking sheet and toast in the oven at 350°F (175°C) for 5–7 minutes or until golden brown. Stir occasionally to prevent burning.
- In a saucepan over low heat, melt the caramels with the heavy cream and salt, stirring constantly until smooth.
- Remove from heat and stir in the toasted coconut until well combined.
- Spread the caramel-coconut mixture over the cooled brownies in an even layer.
- Melt the chocolate chips in the microwave in 30-second intervals, stirring between each until smooth.
- Drizzle the melted chocolate over the top of the caramel-coconut layer.
- Allow the brownies to set before cutting into squares and serving.
Notes
- Let brownies cool completely before adding the topping to avoid melting.
- You can use homemade brownies instead of a boxed mix for a richer flavor.
- For a neater chocolate drizzle, use a piping bag or plastic bag with a snipped corner.
