Description

Delicious and easy-to-make salmon patties that are crispy on the outside and tender inside, perfect for a quick dinner or lunch.


Ingredients

  • 1 (14.75 oz) can salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 large eggs, beaten
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a large bowl, combine the salmon, breadcrumbs, onion, parsley, eggs, lemon juice, Dijon mustard, salt, and pepper.
  2. Mix until well combined and shape into 6-8 patties.
  3. Heat olive oil in a skillet over medium heat.
  4. Add patties to the skillet and cook for about 3-4 minutes on each side or until golden brown and cooked through.
  5. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve warm with your choice of sauce or a side salad.

Notes

  • Use fresh salmon if preferred; cook and flake before using.
  • You can substitute breadcrumbs with crushed crackers or panko.
  • Serve with tartar sauce, aioli, or a squeeze of lemon.
