- 1 (14.75 oz) can salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 large eggs, beaten
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine the salmon, breadcrumbs, onion, parsley, eggs, lemon juice, Dijon mustard, salt, and pepper.
- Mix until well combined and shape into 6-8 patties.
- Heat olive oil in a skillet over medium heat.
- Add patties to the skillet and cook for about 3-4 minutes on each side or until golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with your choice of sauce or a side salad.
Notes
- Use fresh salmon if preferred; cook and flake before using.
- You can substitute breadcrumbs with crushed crackers or panko.
- Serve with tartar sauce, aioli, or a squeeze of lemon.
