- 1 (14.75 oz) can salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 large egg
- 1 teaspoon Old Bay seasoning (or paprika and a pinch of cayenne)
- Salt and black pepper to taste
- 2 tablespoons vegetable oil (for frying)
- Lemon wedges, for serving
Instructions
- In a large bowl, combine flaked salmon, breadcrumbs, onion, bell pepper, mayonnaise, mustard, egg, seasoning, salt, and pepper. Mix until well combined.
- Form mixture into 6–8 patties, about 1/2 inch thick.
- Heat oil in a skillet over medium heat. Fry croquettes in batches for 3–4 minutes per side or until golden brown and cooked through.
- Drain on paper towels and serve warm with lemon wedges or your favorite dipping sauce.
Notes
- Use fresh cooked salmon instead of canned for a richer flavor.
- Chill patties for 15 minutes before frying to help them hold together.
- Serve with remoulade, tartar sauce, or a spicy aioli for added flavor.
