Description

A traditional Russian potato salad, Olivye is creamy, hearty, and packed with vegetables, pickles, and sometimes meat. It’s a popular dish served during holidays and celebrations.


Ingredients

  • 3 medium potatoes, boiled and diced
  • 2 medium carrots, boiled and diced
  • 1 cup cooked peas
  • 4 hard-boiled eggs, diced
  • 5 dill pickles, diced
  • 1/2 cup cooked chicken breast or bologna, diced (optional)
  • 1/2 cup mayonnaise
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the potatoes and carrots until tender. Let them cool, then dice into small cubes.
  2. Cook the peas if using fresh or frozen. If canned, drain and rinse.
  3. Dice the hard-boiled eggs, pickles, and cooked chicken or bologna (if using).
  4. Combine all the ingredients in a large mixing bowl.
  5. Add mayonnaise, salt, and pepper. Mix well until everything is evenly coated.
  6. Chill in the refrigerator for at least 1 hour before serving.
