- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

- Diced tomatoes (reserve 1 tbsp from the can)
- Fresh parsley or cilantro (chopped)
- Green onions (chopped)
Instructions
- Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add the ground beef and break it apart using a wooden spoon. Cook for about 5 minutes, stirring occasionally, until no pink remains and the meat is fully cooked. Drain any excess fat to keep the dip from being greasy.
- Season and Add Tomatoes: Lower the heat to medium and stir in the taco seasoning along with the entire can of Rotel tomatoes, including the juices. Cook for 2 to 3 minutes, stirring frequently, until the mixture is well combined and the sauce is simmering. Optionally, reserve 1 tablespoon of diced tomatoes for garnish.
- Melt the Cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously to ensure all the cheese melts evenly into the tomato and beef mixture, creating a smooth, creamy dip.
- Garnish and Serve: Optionally sprinkle the reserved diced tomatoes, chopped fresh parsley or cilantro, and sliced green onions over the dip for added color and flavor. Serve immediately alongside tortilla chips, crostini, or toasted baguettes for dipping.
