Description

  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, garlic, thyme, salt, and pepper until well coated.
  3. Spread the sweet potatoes out on the prepared baking sheet in a single layer.
