- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil, garlic, thyme, salt, and pepper until well coated.
- Spread the sweet potatoes out on the prepared baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are golden and crispy on the edges.
- Remove from oven and sprinkle with Parmesan cheese while hot.
- Garnish with fresh parsley if desired, and serve warm.
