- 1 whole chicken (about 4 lbs)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 lemon, halved
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the chicken and pat it dry with paper towels.
- In a small bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, pepper, and paprika.
- Rub the mixture all over the chicken, including under the skin where possible.
- Place the lemon halves inside the cavity of the chicken.
- Place the chicken in a roasting pan and pour the chicken broth into the bottom of the pan.
- Roast the chicken in the preheated oven for about 1 hour 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Remove from oven and let rest for 10-15 minutes before carving.
- Serve warm with pan juices drizzled over the top.
Notes
- Use a meat thermometer to ensure the chicken is fully cooked.
- Letting the chicken rest helps retain its juices.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
