Description

A refreshing and tangy frozen drink made with rhubarb, citrus juices, and a hint of sweetness — perfect for summer gatherings.


Ingredients

  • 8 cups chopped rhubarb
  • 8 cups water
  • 2 cups granulated sugar
  • 1 (3 oz) package strawberry gelatin
  • 1/2 cup lemon juice
  • 1/2 cup orange juice
  • 2 cups vodka (optional)
  • Lemon-lime soda or ginger ale, for serving

Instructions

  1. In a large pot, combine rhubarb and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until rhubarb is soft.
  2. Strain the liquid through a fine mesh sieve, discarding the solids.
  3. Stir in sugar and strawberry gelatin until completely dissolved.
  4. Add lemon juice, orange juice, and vodka (if using). Mix well.
  5. Pour into a large freezer-safe container and freeze for several hours or overnight, stirring occasionally if possible to create a slushy texture.
  6. To serve, scoop slush into a glass and top with lemon-lime soda or ginger ale. Stir gently and enjoy.

Notes

  • You can omit the vodka for a non-alcoholic version.
  • Adjust the sugar to taste depending on the tartness of your rhubarb.
  • Slush keeps well in the freezer for several weeks.
