A refreshing and tangy frozen drink made with rhubarb, citrus juices, and a hint of sweetness — perfect for summer gatherings.

- 8 cups chopped rhubarb
- 8 cups water
- 2 cups granulated sugar
- 1 (3 oz) package strawberry gelatin
- 1/2 cup lemon juice
- 1/2 cup orange juice
- 2 cups vodka (optional)
- Lemon-lime soda or ginger ale, for serving
Instructions
- In a large pot, combine rhubarb and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until rhubarb is soft.
- Strain the liquid through a fine mesh sieve, discarding the solids.
- Stir in sugar and strawberry gelatin until completely dissolved.
- Add lemon juice, orange juice, and vodka (if using). Mix well.
- Pour into a large freezer-safe container and freeze for several hours or overnight, stirring occasionally if possible to create a slushy texture.
- To serve, scoop slush into a glass and top with lemon-lime soda or ginger ale. Stir gently and enjoy.
Notes
- You can omit the vodka for a non-alcoholic version.
- Adjust the sugar to taste depending on the tartness of your rhubarb.
- Slush keeps well in the freezer for several weeks.
