Ingredients
Scale
Main Ingredients
- 4 cups chopped fresh rhubarb (about 1 pound)
- 1/2 cup granulated sugar (adjust to taste)
- 1/4 cup apple juice or water
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon ground ginger (optional)
- Pinch of salt
Instructions
- Combine Ingredients: In a medium saucepan, add the chopped rhubarb, sugar, apple juice or water, lemon juice, ground cinnamon, ground ginger, and a pinch of salt. Stir to combine all ingredients before heating.
- Simmer the Rhubarb: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking. This will take about 10 minutes as the rhubarb begins to break down and release its juices.
- Cook until Thickened: Reduce the heat to low and continue cooking the rhubarb mixture for an additional 25 to 30 minutes. Stir frequently to keep it from burning and to help it develop a smooth, thick consistency.
- Puree the Mixture (Optional): For a silky texture, use an immersion blender directly in the pot or transfer the mixture in batches to a regular blender and puree until smooth. This step is optional, depending on your preferred texture of the butter.
- Cool and Store: Allow the rhubarb butter to cool completely before transferring it into jars or airtight containers. Store in the refrigerator for up to 2 weeks or freeze for extended preservation.
Notes
- Adjust the sugar amount depending on the tartness of your rhubarb and your sweetness preference.
- This butter is excellent spread on toast, biscuits, pancakes, or mixed into yogurt.
- Try using it as a unique topping for grilled meats or desserts for a sweet-tart flavor boost.
- Ensure to stir frequently while cooking to prevent the rhubarb from sticking or burning on the bottom of the pan.
- Freezing in small portions is a great way to keep the butter fresh longer and use only what you need.
