Ingredients
Scale
Cake Batter
- 1 box red velvet cake mix (15.25 oz)
- 1/3 cup vegetable oil
- 2 large eggs
Cheesecake Filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Optional Coating or Drizzle
- 1/2 cup white chocolate chips or almond bark
- Red and white sprinkles
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Make the Dough: In a large bowl, combine the red velvet cake mix, vegetable oil, and eggs. Stir well until a thick dough forms, ensuring all ingredients are fully incorporated.
- Shape and Bake Cookies: Scoop out tablespoon-sized portions of dough and roll each into a ball. Flatten them slightly and place on the prepared baking sheet, leaving space between each. Bake in the oven for 8 to 10 minutes until set, then remove and allow them to cool completely on a wire rack.
- Prepare Cheesecake Filling: While cookies cool, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and creamy.
- Assemble Bites: Once the cookies have cooled, spread or dollop a small spoonful of cheesecake filling onto one cookie and sandwich it with another to create a bite-sized treat.
- Optional Decoration: If desired, melt the white chocolate chips or almond bark and drizzle over the assembled bites. Sprinkle red and white sprinkles on top while the chocolate is still wet.
- Chill Before Serving: Place the cheesecake bites in the refrigerator for at least 30 minutes to set before serving for the best texture and flavor.
Notes
- For a quicker version, press the cheesecake filling into an indentation made by your thumb in a single cookie instead of sandwiching.
- Store assembled bites in the refrigerator for up to 5 days to keep them fresh.
- You can substitute almond bark with white chocolate chips or your preferred coating for variation.
