Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 pound asparagus, ends trimmed, cut into 2-inch pieces
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup chicken broth (or vegetable broth for vegetarian)
- 1 tablespoon lemon juice
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 package (20 ounces) refrigerated cheese ravioli
Instructions
- Cook the ravioli: Prepare the ravioli according to the package instructions, usually boiling until tender. Drain well and set aside.
- Sauté asparagus: Heat olive oil in a large skillet over medium-high heat. Add the asparagus pieces and cook for 4-5 minutes, stirring occasionally until the asparagus is crisp-tender.
- Add tomatoes and garlic: Add the halved cherry tomatoes and minced garlic to the skillet. Season with salt and pepper, then cook for 2-3 minutes until the tomatoes begin to soften.
- Add liquids and simmer: Pour in the chicken broth and lemon juice, then allow the mixture to simmer for about 2 minutes so the flavors meld together.
- Toss ravioli with sauce: Add the cooked ravioli to the skillet and gently toss to coat all the ingredients evenly with the sauce.
- Incorporate herbs and cheese: Stir in the fresh basil, parsley, and grated Parmesan cheese. Cook for another 1-2 minutes until everything is well combined and heated through.
- Serve: Serve the dish hot, garnished with additional Parmesan cheese if desired for extra flavor.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Use fresh asparagus for the best flavor; if using frozen, thaw and drain thoroughly before cooking.
- To add protein, consider tossing in cooked chicken or shrimp along with the ravioli.
- Adjust seasoning with salt and pepper to taste as the broth and Parmesan cheese add salty elements.
- Garnish with extra fresh herbs for more vibrant flavor and color.
