Rasta Pasta is a vibrant and flavorful Caribbean-inspired pasta dish made with creamy sauce, colorful bell peppers, jerk seasoning, and often chicken or shrimp.

- 8 oz penne pasta
- 1 tbsp olive oil
- 1 lb chicken breast, sliced (or shrimp)
- 1 tbsp jerk seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 cup diced onion
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken (or shrimp) and season with jerk seasoning. Cook until fully cooked and lightly browned. Remove from skillet and set aside.
- In the same skillet, add garlic, onion, and bell peppers. Sauté for 5-7 minutes until tender.
- Add chicken broth and heavy cream to the skillet. Stir to combine, then bring to a simmer.
- Stir in Parmesan cheese and cook until the sauce thickens slightly.
- Return the cooked chicken (or shrimp) and pasta to the skillet. Toss to coat in the sauce.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- Use coconut milk instead of heavy cream for a dairy-free version.
- Adjust jerk seasoning to your preferred spice level.
- Vegetarian version: skip the meat and add more veggies like mushrooms or zucchini.
