- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 cup shredded carrots
- 1/2 cup chopped spinach
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 1/2 cup shredded purple cabbage
- 1/4 cup chopped green onions
Instructions
- In a medium bowl, mix the cream cheese, Greek yogurt, garlic powder, and salt until smooth.
- Lay out each tortilla and spread a generous layer of the cream cheese mixture over the entire surface.
- Evenly sprinkle the carrots, spinach, red bell pepper, yellow bell pepper, cabbage, and green onions over the spread.
- Gently roll each tortilla tightly and place seam-side down.
- Refrigerate the rolled tortillas for at least 30 minutes to firm up.
- Slice each roll into 1-inch pinwheels using a sharp knife.
- Arrange the pinwheels on a platter and serve chilled.
