Description

Rainbow Veggie Pinwheels are colorful, healthy, and delicious bite-sized snacks filled with a variety of fresh vegetables and a creamy spread, rolled up in a soft tortilla.


Ingredients

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 cup shredded carrots
  • 1/2 cup chopped spinach
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup shredded purple cabbage
  • 1/4 cup chopped green onions

Instructions

  1. In a medium bowl, mix the cream cheese, Greek yogurt, garlic powder, and salt until smooth.
  2. Lay out each tortilla and spread a generous layer of the cream cheese mixture over the entire surface.
  3. Evenly sprinkle the carrots, spinach, red bell pepper, yellow bell pepper, cabbage, and green onions over the spread.
  4. Gently roll each tortilla tightly and place seam-side down.
  5. Refrigerate the rolled tortillas for at least 30 minutes to firm up.
  6. Slice each roll into 1-inch pinwheels using a sharp knife.
  7. Arrange the pinwheels on a platter and serve chilled.
