A quick and easy vegetable lo mein recipe loaded with fresh veggies and tossed in a savory sauce. Perfect for a healthy weeknight dinner.

- 8 oz lo mein noodles
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup snow peas
- 1 cup broccoli florets
- 3 green onions, sliced
- 1/4 cup soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp hoisin sauce
- 1 tsp sugar
- 1 tsp grated ginger
- 1 tbsp vegetable oil
Instructions
- Cook the lo mein noodles according to package instructions. Drain and set aside.
- In a small bowl, mix soy sauce, oyster sauce (if using), hoisin sauce, sugar, and grated ginger. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and cook for about 30 seconds until fragrant.
- Add carrots, bell pepper, snow peas, and broccoli. Stir-fry for 4-5 minutes until vegetables are just tender.
- Add the cooked noodles to the skillet and pour in the sauce mixture. Toss everything together until well combined and heated through.
- Drizzle sesame oil over the noodles and mix in sliced green onions.
- Serve hot and enjoy!
Notes
- Use any vegetables you have on hand such as zucchini, mushrooms, or cabbage.
- For a protein boost, add tofu, chicken, or shrimp.
- Make it gluten-free by using tamari instead of soy sauce and gluten-free noodles.
