Ingredients
Scale
Dry Ingredients
- 3 cups rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1 cup pumpkin puree
- 1/2 cup peanut butter
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Combine wet ingredients. In a medium saucepan, combine the peanut butter, honey (or maple syrup), cocoa powder, and salt. Cook over medium heat, stirring constantly until the mixture is smooth and well integrated.
- Add pumpkin and spices. Remove the saucepan from heat and stir in the pumpkin puree, pumpkin pie spice, cinnamon, and vanilla extract until the mixture is evenly mixed.
- Incorporate oats. Add the rolled oats to the mixture and stir thoroughly until each oat is coated with the chocolate-pumpkin mixture.
- Form cookies. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, shaping them into cookie forms.
- Chill to set. Refrigerate the cookies for at least 30 minutes to allow them to firm up. Once set, they are ready to serve or store in an airtight container for later enjoyment.
Notes
- You can substitute maple syrup with honey for a different sweetness profile or to keep the recipe vegan.
- Use natural peanut butter for best flavor and texture.
- For a nut-free version, try sunflower seed butter instead of peanut butter.
- Store cookies in an airtight container in the refrigerator for up to one week.
- Add chopped nuts or chocolate chips to the mixture for added texture, if desired.
