Instructions
- Preheat and prepare baking sheet: Place the oven rack in the middle position and preheat the oven to 400°F. Line a large baking sheet with parchment paper and set aside.
- Thaw and roll puff pastry: Thaw the puff pastry sheet as per package instructions. Roll out the thawed sheet into a 10×10-inch square. Carefully transfer it onto the prepared baking sheet.
- Create pastry border: Fold one edge of the puff pastry over ½ inch, then fold again another ½ inch to make a sturdy border. Repeat this folding with all sides to form a secure edge that can contain the eggs.
- Add eggs and secure corners: Crack the eggs directly over the puff pastry within the border, spreading them evenly. Dip a pastry brush into the egg whites in the tart and brush the puff pastry edges to help seal and hold the corners down.
- Season and add toppings: Season the eggs with salt and pepper to taste. Evenly sprinkle the grated cheese over the eggs, then distribute the diced cooked bacon on top.
- Bake the tart: Place the tart in the oven and bake for about 18 minutes, or until the puff pastry edges are golden brown and puffed up.
- Finish and serve: Carefully remove the tart from the oven and sprinkle with fresh chopped chives. Cut into squares and serve warm for a delightful breakfast or brunch.
