- 12 large egg whites
- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup chopped spinach
- 1/4 cup shredded low-fat cheese (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Olive oil spray (for greasing the muffin tin)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil spray.
- In a mixing bowl, whisk together the egg whites, garlic powder, onion powder, salt, and pepper.
- Add the diced bell peppers, onions, and chopped spinach to the egg white mixture. Stir to combine.
- If using, add the shredded cheese and mix well.
- Pour the egg white mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 15-18 minutes, or until the egg white bites are set and slightly golden on top.
- Remove from the oven and let cool for a few minutes before serving.
