Description

Porcupine Meatballs are savory ground beef meatballs mixed with rice, simmered in a flavorful tomato sauce until tender. This classic comfort dish is easy to make and loved by all ages.


Ingredients

  • 1 lb ground beef
  • 1/2 cup uncooked long grain white rice
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) tomato sauce
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, uncooked rice, chopped onion, garlic, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  3. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, about 5-7 minutes.
  4. In a separate bowl, mix together tomato sauce, water, Worcestershire sauce, and Italian seasoning.
  5. Pour the tomato sauce mixture over the meatballs in the skillet.
  6. Bring to a simmer, then reduce heat to low. Cover and cook for 35-40 minutes, or until rice is tender and meatballs are cooked through.
  7. Stir occasionally and add more water if the sauce thickens too much.
  8. Serve hot over mashed potatoes or with crusty bread.

Notes

  • You can use ground turkey or chicken instead of beef.
  • For extra flavor, add a splash of red wine to the tomato sauce.
