Description

Poppy Seed Chicken is a creamy and comforting casserole made with tender chicken, a rich sour cream sauce, buttery Ritz cracker topping, and a hint of nutty flavor from poppy seeds.


Ingredients

  • 4 cups cooked chicken, shredded or cubed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 tablespoon poppy seeds
  • 1 sleeve Ritz crackers, crushed
  • 1/2 cup butter, melted
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the cream of chicken soup, sour cream, poppy seeds, salt, and pepper.
  3. Stir in the cooked chicken until well coated.
  4. Spread the chicken mixture evenly in a greased 9×13 inch baking dish.
  5. In a separate bowl, mix crushed Ritz crackers with melted butter.
  6. Sprinkle the cracker mixture evenly over the chicken mixture.
  7. Bake for 25–30 minutes, or until hot and bubbly and the topping is golden brown.
  8. Serve hot, optionally over rice or noodles.

Notes

  • You can use rotisserie chicken to save time.
  • Try adding a splash of lemon juice for a bright flavor contrast.
  • Top with shredded cheese before baking for a cheesy twist.
