- 4 cups cooked chicken, shredded or cubed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 tablespoon poppy seeds
- 1 sleeve Ritz crackers, crushed
- 1/2 cup butter, melted
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the cream of chicken soup, sour cream, poppy seeds, salt, and pepper.
- Stir in the cooked chicken until well coated.
- Spread the chicken mixture evenly in a greased 9×13 inch baking dish.
- In a separate bowl, mix crushed Ritz crackers with melted butter.
- Sprinkle the cracker mixture evenly over the chicken mixture.
- Bake for 25–30 minutes, or until hot and bubbly and the topping is golden brown.
- Serve hot, optionally over rice or noodles.
Notes
- You can use rotisserie chicken to save time.
- Try adding a splash of lemon juice for a bright flavor contrast.
- Top with shredded cheese before baking for a cheesy twist.
