Description

Ingredients

  • 1 tbsp olive oil, plus more for drizzling
  • 1 tsp lemon zest

  • 1/4 cup pomegranate seeds

  • 1 tbsp honey (optional)
  • Salt and pepper, to taste
  • Fresh mint leaves, for garnish (optional)
  • Toasted pita or crackers, for serving

Instructions

  1. In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon zest, and lemon juice. Blend until smooth and creamy.
  2. Taste and season with salt and pepper as desired.
  3. Transfer the whipped feta to a serving bowl and smooth the top with a spoon.
  4. Top with pomegranate seeds, chopped pistachios, a drizzle of olive oil, and honey if using.
  5. Garnish with fresh mint leaves if desired.
  6. Serve with toasted pita or crackers.
