Description

This Pineapple Upside Down Cake Fudge is a delightful, no-bake treat combining the rich creaminess of white chocolate fudge with the tropical flavors of pineapple and maraschino cherries. Featuring a quick melt-and-mix preparation and a refreshing fruity twist, it’s perfect for parties, potlucks, or anytime you crave a sweet, indulgent dessert with minimal effort.

Ingredients

Scale

Fudge Base

  • 2 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • ¼ cup unsalted butter
  • 1 box (3.4 oz) instant vanilla pudding mix
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract

Fruit Mix-ins

  • ½ cup crushed pineapple, well-drained
  • 8-10 maraschino cherries, halved and patted dry

Instructions

  1. Prepare the Baking Dish: Line an 8×8-inch baking dish with parchment paper and lightly grease it to ensure easy removal of the fudge later.
  2. Melt the Fudge Base: In a saucepan over low heat, combine the white chocolate chips, sweetened condensed milk, and unsalted butter. Stir continuously until the mixture is smooth and fully melted.
  3. Mix Ingredients: Remove the saucepan from heat, then stir in the instant vanilla pudding mix, powdered sugar, and vanilla extract until the mixture is well combined with no lumps.
  4. Add the Fruit: Gently fold in the well-drained crushed pineapple and halved maraschino cherries, distributing the fruit evenly throughout the fudge mixture.
  5. Set the Fudge: Pour the mixture into the prepared baking dish, smoothing the top with a spatula. Refrigerate for at least 4 hours, or until the fudge is firm enough to cut.
  6. Slice & Serve: Once fully set and chilled, cut the fudge into 16 squares and serve cold for the best texture and flavor.

Notes

  • Ensure the crushed pineapple is well-drained to prevent the fudge from becoming too wet or sticky.
  • Use parchment paper to line the baking dish for easy removal and cleanup.
  • Store leftover fudge in an airtight container in the refrigerator for up to one week.
  • Allow the fudge to come to room temperature slightly before serving if it’s too firm out of the fridge.
  • For a different flavor twist, experiment with adding shredded coconut or chopped nuts.
