Ingredients
Scale
Chicken & Toppings
- 3-4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup fresh pineapple chunks
- 1 medium fresh jalapeño, sliced thinly
- 1/2 cup BBQ sauce
- Fresh cilantro (optional)
Pizza Base
- 1 lb pizza dough
- 2 cups shredded mozzarella cheese
- 1 tbsp olive oil
Instructions
- Preheat and Prepare Dough: Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface into a 12-inch round to create the pizza base.
- Cook Chicken: Heat a skillet over medium heat and add the olive oil. Cook the chicken breasts for 6-8 minutes on each side until golden brown and cooked through. Allow the chicken to cool slightly, then shred it into bite-sized pieces.
- Toss Chicken in BBQ Sauce: Mix the shredded chicken with the BBQ sauce until it is fully coated and flavorful. Spread the remaining BBQ sauce evenly over the rolled-out pizza dough.
- Assemble Pizza: Sprinkle the shredded mozzarella cheese evenly over the sauced dough. Evenly distribute the pineapple chunks and thinly sliced jalapeño slices on top of the cheese layer.
- Bake: Place the assembled pizza in the preheated oven and bake for 12-15 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.
- Serve: Remove the pizza from the oven and let it cool for a few minutes. Slice and garnish with fresh cilantro if desired before serving.
Notes
- For extra heat, add more jalapeño slices or sprinkle with red pepper flakes.
- If you prefer, substitute chicken breasts with thighs for juicier meat.
- Use store-bought BBQ sauce or homemade for a personalized flavor.
- To avoid a soggy crust, ensure pineapple chunks are well-drained before adding to the pizza.
- Let the pizza rest a few minutes after baking to allow cheese to set for easier slicing.
