- 4 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 cup pineapple chunks (canned or fresh)
- 1/2 cup pineapple juice (from can or fresh)
- 8 slices bacon
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until lightly browned, about 2-3 minutes per side.
- Place seared chicken breasts in a baking dish.
- Wrap 2 slices of bacon around each chicken breast.
- In a bowl, mix BBQ sauce and pineapple juice, then pour over the chicken.
- Add pineapple chunks around and on top of the chicken.
- Bake for 25-30 minutes, or until chicken is cooked through (internal temp 165°F/74°C) and bacon is crispy.
- Optional: Broil for an additional 2-3 minutes for crispier bacon.
- Garnish with fresh parsley and serve.

- Use thick-cut bacon for extra flavor and texture.
- You can grill the chicken instead of baking if preferred.
