Description

A sweet and savory dish combining tender chicken breasts with tangy pineapple, smoky BBQ sauce, and crispy bacon for a deliciously easy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup pineapple juice (from can or fresh)
  • 8 slices bacon
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until lightly browned, about 2-3 minutes per side.
  4. Place seared chicken breasts in a baking dish.
  5. Wrap 2 slices of bacon around each chicken breast.
  6. In a bowl, mix BBQ sauce and pineapple juice, then pour over the chicken.
  7. Add pineapple chunks around and on top of the chicken.
  8. Bake for 25-30 minutes, or until chicken is cooked through (internal temp 165°F/74°C) and bacon is crispy.
  9. Optional: Broil for an additional 2-3 minutes for crispier bacon.
  10. Garnish with fresh parsley and serve.

  • You can grill the chicken instead of baking if preferred.
