- 4 salmon fillets (about 6 oz each)
- 1/2 cup basil pesto
- 1/4 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 tablespoon olive oil

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the salmon fillets skin-side down on the prepared baking sheet. Pat them dry with paper towels and season with salt and pepper.
- In a small bowl, mix the pesto, Parmesan cheese, panko breadcrumbs, and olive oil until combined.
- Spread the pesto mixture evenly over the top of each salmon fillet.
- Bake in the preheated oven for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve hot with lemon wedges on the side.
