Description

  • 4 slices of Swiss cheese
  • 4 slices of deli ham
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)

  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional)
  • 2 tablespoons olive oil or melted butter (for drizzling or pan-frying)
  • Toothpicks (for securing rolls)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about 1/4 inch thickness between two sheets of plastic wrap.
  3. Place a slice of ham and a slice of cheese on each breast, then roll up tightly and secure with toothpicks.
  4. Season flour with salt and pepper in a shallow bowl.
  5. Beat the eggs in another bowl. Add Dijon mustard if using.
  6. Place breadcrumbs in a third bowl.
  7. Dredge each chicken roll in the flour, then dip into the egg, and finally coat with breadcrumbs.
