  • 1/2 pound thinly sliced beef (ribeye or sirloin works best)

  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup sliced green onions
  • 1 tablespoon unsalted butter
  • Sesame seeds for garnish (optional)

Sauce (Pepper Lunch-style)

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon mirin or honey
  • 1 teaspoon garlic (grated)
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, mirin (or honey), grated garlic, and freshly ground black pepper until well combined. Set aside to let the flavors meld.
  2. Heat the Pan and Sear Beef: Heat vegetable oil in a large skillet, wok, or cast iron pan over medium-high heat until hot. Add the thinly sliced beef in a single layer. Allow it to sear undisturbed for about 1 minute to develop a nice crust, then stir-fry briefly until the beef is nearly cooked through.
  3. Add Noodles and Sauce: Push the beef to one side of the pan. Add the pre-cooked or fresh udon noodles to the empty side. Pour the prepared sauce evenly over the noodles and beef.
  4. Add Vegetables and Combine: Add corn kernels and sliced green onions to the pan. Toss everything together to combine and cook for an additional 2 to 3 minutes until the noodles are heated through and well-coated with the sauce.
  5. Finish with Butter and Serve: Place a pat of unsalted butter in the center of the pan. Sprinkle with sesame seeds if desired. Serve immediately, stirring the butter throughout the dish just before eating to add richness and extra flavor.
