- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- 2 to 4 tablespoons warm water (to thin)
- Optional: pinch of red pepper flakes or sriracha for heat
Instructions
- In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, lime juice, and honey.
- Add the sesame oil, minced garlic, and grated ginger. Stir until smooth.
- Gradually whisk in warm water, 1 tablespoon at a time, until the dressing reaches your desired consistency.
- If using, stir in red pepper flakes or sriracha for heat.
- Adjust seasonings to taste and serve immediately or refrigerate until ready to use.
Notes
- This dressing thickens as it sits; add more water to loosen if needed.
- Use maple syrup for a vegan version.
- Great on salads, grain bowls, or as a dipping sauce for spring rolls.
