Description

A creamy, tangy, and slightly sweet peanut dressing perfect for salads, noodles, or as a dipping sauce.


Ingredients

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 2 to 4 tablespoons warm water (to thin)
  • Optional: pinch of red pepper flakes or sriracha for heat

Instructions

  1. In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, lime juice, and honey.
  2. Add the sesame oil, minced garlic, and grated ginger. Stir until smooth.
  3. Gradually whisk in warm water, 1 tablespoon at a time, until the dressing reaches your desired consistency.
  4. If using, stir in red pepper flakes or sriracha for heat.
  5. Adjust seasonings to taste and serve immediately or refrigerate until ready to use.

Notes

  • This dressing thickens as it sits; add more water to loosen if needed.
  • Use maple syrup for a vegan version.
  • Great on salads, grain bowls, or as a dipping sauce for spring rolls.
