Crust

- 2 large eggs

Peach Topping
- 1 ½ cups diced fresh or canned peaches, drained
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Crumble Topping
- ¾ cup all purpose flour

- ¼ cup cold butter, cubed
- ¼ teaspoon salt
Instructions
- Prepare the crust: Preheat your oven to 350°F and line a 9×9 inch baking pan with parchment paper. In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar until well mixed. Press this mixture firmly and evenly into the bottom of the prepared pan. Bake the crust for 8 minutes, then remove from the oven and allow it to cool slightly.
- Make the cheesecake layer: In a separate bowl, beat the softened cream cheese and ½ cup granulated sugar together until smooth and creamy. Beat in the eggs one at a time, mixing well after each addition, followed by the vanilla extract. Spread this cheesecake filling evenly over the baked crust.
- Add the peach layer: In another bowl, toss the diced peaches with cinnamon and nutmeg to coat them evenly. Spread the spiced peaches evenly over the cheesecake layer.
- Prepare the crumble topping: Combine the flour, brown sugar, and salt in a bowl. Cut in the cold, cubed butter with a fork or pastry cutter until the mixture becomes crumbly. Sprinkle this crumble topping evenly over the peach layer.
- Bake the bars: Place the pan in the oven and bake for 40 to 45 minutes, or until the center is set and the topping turns golden brown.
- Cool and chill: Remove the bars from the oven and allow them to cool completely at room temperature. Then refrigerate for at least 2 hours to set before slicing into 12 bars and serving.
