Description

These Patriotic Jello Cookies are colorful, soft, and full of fruity flavor. Made with red and blue Jello, they are a festive and fun treat perfect for celebrating the 4th of July or any patriotic holiday.


Ingredients

  • 3 oz box strawberry Jello
  • 3 oz box berry blue Jello
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Red and blue food coloring (optional, for brighter colors)
  • Extra Jello powder for rolling (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Divide the dough into two equal portions.
  7. Mix the strawberry Jello powder into one portion and the berry blue Jello powder into the other. Add food coloring if desired for more vibrant colors.
  8. Roll dough into 1-inch balls and, if desired, roll in additional Jello powder for extra color and flavor.
  9. Place on prepared baking sheets about 2 inches apart and slightly flatten each ball with your fingers.
  10. Bake for 8-10 minutes or until the edges are set. Do not overbake.
  11. Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can use any flavor of Jello for different colors or occasions.
  • Food coloring helps enhance the brightness of the cookie colors.
  • Store cookies in an airtight container for up to a week.
