- 3 oz box strawberry Jello
- 3 oz box berry blue Jello
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- Red and blue food coloring (optional, for brighter colors)
- Extra Jello powder for rolling (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Divide the dough into two equal portions.
- Mix the strawberry Jello powder into one portion and the berry blue Jello powder into the other. Add food coloring if desired for more vibrant colors.
- Roll dough into 1-inch balls and, if desired, roll in additional Jello powder for extra color and flavor.
- Place on prepared baking sheets about 2 inches apart and slightly flatten each ball with your fingers.
- Bake for 8-10 minutes or until the edges are set. Do not overbake.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can use any flavor of Jello for different colors or occasions.
- Food coloring helps enhance the brightness of the cookie colors.
- Store cookies in an airtight container for up to a week.
