Description

This Parmesan Crusted Chicken recipe features tender chicken breasts coated in a flavorful mixture of egg wash and shredded Parmesan cheese, then pan-fried to golden, crispy perfection. Ready in just 22 minutes, this dish combines simple ingredients with a quick cooking method to deliver a savory, satisfying meal that’s perfect for weeknight dinners or special occasions.

Ingredients

Scale

Chicken

  • 2 lbs boneless, skinless chicken breasts

Egg Wash

  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Coating

  • 2 cups shredded Parmesan cheese

Cooking Fat

  • 4 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Prepare Chicken: Cut each chicken breast in half horizontally. For thick breasts, butterfly by slicing almost in half horizontally and opening like a book. Place chicken cutlets between two sheets of plastic wrap and pound them to about ½ inch thickness to ensure even cooking.
  2. Make Egg Wash: In a shallow bowl, whisk together the egg, water, minced garlic, salt, and black pepper until fully blended to create a flavorful coating liquid.
  3. Coat in Parmesan: Place the shredded Parmesan cheese in another shallow bowl. Dip each chicken cutlet into the egg mixture, allowing excess to drip off, then dredge thoroughly in the Parmesan cheese, pressing gently so it adheres well. Flip and repeat on the other side, then shake off any extra cheese.
  4. Cook Chicken: Heat the butter and olive oil over medium-high heat in a large skillet. Add the coated chicken cutlets carefully to the hot skillet. Cook without moving for about 3 minutes until the edges are golden brown and crispy. Flip carefully and cook the other side until golden brown and chicken is cooked through.
  5. Serve: Transfer the cooked chicken to a serving plate. Garnish with fresh parsley if desired and serve immediately for best taste and texture.

Notes

  • For evenly cooked chicken, make sure all pieces are pounded to the same thickness.
  • Using a combination of butter and olive oil helps achieve a golden crust and adds flavor.
  • You can garnish with fresh parsley or lemon wedges for added freshness.
  • Serve with a side of vegetables or a light salad for a balanced meal.
  • Ensure not to overcrowd the pan to maintain crispiness.
