Ingredients
- 1 large butternut squash (about 2 1/2 to 3 pounds), peeled, seeded, and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme or rosemary (optional)
Instructions
- Preheat Oven: Preheat the oven to 400°F and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Squash: Place the cubed butternut squash in a large bowl. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and dried herbs if using. Toss well to coat every piece evenly with the seasoning and oil.
- Arrange on Baking Sheet: Spread the seasoned squash cubes in a single layer on the prepared baking sheet, making sure they are not overcrowded to allow even roasting and caramelization.
- Roast: Roast in the preheated oven for 25 to 30 minutes, stirring halfway through the cooking time to promote even browning and tenderness.
- Serve: Once tender and caramelized at the edges, remove from the oven and serve warm as a delicious side dish.
Notes
- For a touch of sweetness, drizzle with a little maple syrup during the last 5 minutes of roasting.
- You can add a pinch of cinnamon or smoked paprika for extra flavor and aroma.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
