Description

A creamy and flavorful one-pot pasta dish featuring tender chicken in a sun-dried tomato and garlic cream sauce. Easy enough for a weeknight dinner, yet impressive enough to ‘marry’ someone!


Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta (or any short pasta)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through. Remove and set aside.
  3. In the same pot, add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1-2 minutes.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add uncooked pasta, bring to a boil, then reduce heat and simmer for about 12-15 minutes until pasta is al dente and sauce is thickened.
  6. Return cooked chicken to the pot and stir in Parmesan cheese.
  7. Let simmer for another 2-3 minutes, then garnish with fresh basil or parsley and serve warm.

Notes

  • Use freshly grated Parmesan for best flavor and texture.
  • Adjust spice level by increasing or omitting red pepper flakes.
  • You can substitute sun-dried tomatoes with cherry tomatoes if needed.
  • Add spinach at the end for extra greens.
