A creamy and flavorful one-pot pasta dish featuring tender chicken in a sun-dried tomato and garlic cream sauce. Easy enough for a weeknight dinner, yet impressive enough to ‘marry’ someone!

- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes, chopped
- 2 1/2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne pasta (or any short pasta)
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through. Remove and set aside.
- In the same pot, add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1-2 minutes.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add uncooked pasta, bring to a boil, then reduce heat and simmer for about 12-15 minutes until pasta is al dente and sauce is thickened.
- Return cooked chicken to the pot and stir in Parmesan cheese.
- Let simmer for another 2-3 minutes, then garnish with fresh basil or parsley and serve warm.
Notes
- Use freshly grated Parmesan for best flavor and texture.
- Adjust spice level by increasing or omitting red pepper flakes.
- You can substitute sun-dried tomatoes with cherry tomatoes if needed.
- Add spinach at the end for extra greens.
