Description

A hearty and flavorful one-pot Italian chicken pasta dish loaded with tender chicken, pasta, and vegetables in a savory tomato-based sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 3 cups chicken broth
  • 12 oz penne pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned and cooked through. Remove and set aside.
  2. In the same pot, add onion and cook until translucent. Add garlic, bell pepper, and zucchini, and cook for another 5 minutes.
  3. Stir in the diced tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
  4. Return the chicken to the pot, then add the chicken broth and pasta. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 15 minutes, or until the pasta is cooked and most of the liquid is absorbed.
  6. Stir in Parmesan cheese and cook for another 2 minutes until melted and well combined.
  7. Garnish with fresh basil before serving.

Notes

  • You can substitute vegetables based on what you have on hand.
  • Add more broth if you prefer a saucier consistency.
  • Use whole wheat pasta for added fiber and nutrients.
