Description

This One Pot French Onion Pasta brings the rich, caramelized flavor of classic French onion soup into a creamy, cheesy pasta dish. With golden onions, fragrant thyme, and melty Gruyère cheese, this comforting meal is ready in just one pot and under 40 minutes—perfect for a cozy weeknight dinner.

Ingredients

Units Scale

    Pasta:

  • 12 oz pasta (penne, fusilli, or your favorite shape)
  • Onion Mixture:

  • 3 tablespoons unsalted butter
  • 2 medium onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon sugar (to help caramelize the onions)
  • Broth & Seasonings:

  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Cheese & Garnish:

  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt Butter: In a large pot or Dutch oven, melt butter over medium heat.
  2. Caramelize Onions: Add sliced onions and sugar. Sauté for 10–12 minutes until deeply golden and caramelized.
  3. Add Garlic: Stir in minced garlic and cook for 1–2 minutes until fragrant.
  4. Add Broth & Seasonings: Pour in broth and add dried thyme, salt, and pepper. Bring to a gentle simmer.
  5. Cook Pasta: Stir in the pasta. Cover and cook for 10–12 minutes or until al dente, stirring occasionally.
  6. Reduce Liquid if Needed: If too liquidy, uncover and simmer for 1–2 more minutes to thicken.
  7. Stir in Cheese: Add Gruyère and Parmesan cheeses, stirring until melted and creamy. Adjust salt and pepper.
  8. Serve: Dish into bowls and garnish with parsley.
  9. Enjoy: Serve immediately for the best flavor.

Notes

  • For a richer flavor, deglaze the caramelized onions with a splash of white wine before adding the broth.
  • Make it vegetarian by using vegetable broth and skipping Parmesan or using a vegetarian-friendly alternative.
  • Leftovers reheat well with a splash of broth or milk.
