This One Pan Dumplings recipe is a quick and flavorful dish featuring frozen dumplings baked in a rich coconut milk and red Thai curry sauce with stir-fry vegetables. Perfect for a fuss-free meal, it combines crispy-topped dumplings with aromatic Southeast Asian flavors and a spicy finish from chili crisp and fresh spring onions.

Sauce & Base
- 400 g Coconut milk
- 3 tbsp Red Thai curry paste
- 2 tbsp Soy sauce
- 2 tbsp Rice vinegar
- 1 tbsp Grated ginger
- 2 Garlic cloves, crushed
Vegetables & Garnish
- 300 g Stir fry vegetable bag
- 3 Spring onions, sliced
- Chilli crisp, to drizzle

- 12 Frozen dumplings
Instructions
- Preheat the oven: Preheat your oven to 200℃ fan/220℃ conventional/Gas Mark 7/450°F to ensure it’s hot enough to bake the dumplings evenly and create a crispy top.
- Prepare the sauce and vegetables: In a large ovenproof dish, combine the coconut milk, red Thai curry paste, soy sauce, rice vinegar, grated ginger, and crushed garlic cloves. Stir well until all ingredients are properly blended. Then add the stir fry vegetable mix, folding them into the sauce to coat evenly.
- Add and bake dumplings: Nestle the frozen dumplings into the mixed sauce and vegetables in the dish, spacing them slightly apart. Place the dish in the preheated oven and bake for 20 to 25 minutes until the dumplings develop a crispy top and are heated through inside.
- Garnish and serve: Once baked, remove from the oven and scatter sliced spring onions over the top. Drizzle with chili crisp for added heat and flavor. Serve the dish as is, or spoon over some sticky rice if desired for a heartier meal.
Notes
- Use red Thai curry paste with your preferred spice level; mild versions are available.
- You can swap stir fry vegetables for any frozen mixed vegetables you like.
- For crispier dumpling tops, place under the grill for a couple of minutes after baking, watching carefully to avoid burning.
- Serve with sticky rice or steamed jasmine rice to soak up the flavorful sauce.
- Adjust chili crisp quantity to control the heat as it can be quite spicy.
