- 1 cup pitted black olives
- 1/2 cup pitted green olives
- 2 tablespoons capers, drained
- 2 anchovy fillets
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1/4 cup extra virgin olive oil
- 1 tablespoon fresh parsley, chopped (optional)
- 1/4 teaspoon black pepper
Instructions
- Combine black olives, green olives, capers, anchovy fillets, and garlic in a food processor.
- Pulse until coarsely chopped.
- Add lemon juice and pulse again to mix.
- With the processor running, slowly drizzle in olive oil until a coarse paste forms.
- Stir in chopped parsley if using, and season with black pepper to taste.
- Transfer to a bowl and serve immediately or chill for later use.
