Description

A savory and flavorful spread made from olives, capers, anchovies, and olive oil, perfect as an appetizer or snack.


Ingredients

  • 1 cup pitted black olives
  • 1/2 cup pitted green olives
  • 2 tablespoons capers, drained
  • 2 anchovy fillets
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/4 teaspoon black pepper

Instructions

  1. Combine black olives, green olives, capers, anchovy fillets, and garlic in a food processor.
  2. Pulse until coarsely chopped.
  3. Add lemon juice and pulse again to mix.
  4. With the processor running, slowly drizzle in olive oil until a coarse paste forms.
  5. Stir in chopped parsley if using, and season with black pepper to taste.
  6. Transfer to a bowl and serve immediately or chill for later use.
